Ingredients
- 🧄 1 tbsp olive oil
- 🍄 1 cup mushrooms (sliced)
- 🧅 1 medium onion (chopped)
- 🧈 1 tbsp vegan butter
- 🥫 1/2 cup tomato purée
- 🧄 2 cloves garlic (minced)
- 🌱 1 tsp dried oregano
- 🌶️ 1/2 tsp chili flakes
- 🧂 Salt (to taste)
- 🌿 Fresh coriander
- 🧊 200g firm tofu (cubed)
Instructions
Heat olive oil in a deep pan. Sauté the onions and mushrooms until they turn golden brown and slightly crispy.
Add garlic and chili flakes. Cook for 2 minutes until the raw aroma fades.
Stir in tomato purée, oregano, and salt. Let the mixture simmer and thicken for about 5–7 minutes.
In a separate pan, lightly fry the tofu cubes in vegan butter until the edges are golden. Add them to the sauce and simmer for another 3 minutes.
Garnish with fresh coriander and serve hot with warm rice or toasted vegan naan.
